Succulent Oven-Roasted Herb Chicken
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon, thinly sliced
- 4 cloves garlic, peeled and crushed
- 1/4 cup fresh parsley, chopped, for garnish
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Chicken:
- Pat the chicken thighs dry with paper towels to remove excess moisture.
- Place them in a large mixing bowl.
3. Season the Chicken:
- Drizzle the olive oil over the chicken thighs.
- Sprinkle the salt, black pepper, garlic powder, onion powder, thyme, and rosemary evenly over the chicken.
- Use your hands to rub the seasonings all over the chicken, ensuring even coverage.
4. Arrange in Baking Dish:
- Arrange the seasoned chicken, skin side up, in a single layer in a large baking dish.
- Place lemon slices and crushed garlic cloves around and under the chicken pieces.
5. Roast the Chicken:
- Transfer the baking dish to the preheated oven.
- Roast for about 35–40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown and crispy.
6. Rest the Chicken:
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
7. Serve:
- Transfer the chicken to a serving platter.
- Garnish with chopped fresh parsley before serving.
