Indulgent Chocolate Raspberry Custard Delight
Ingredients
- 4 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla bean paste
- 1/8 teaspoon salt
- 1 cup whipping cream
- 1 cup fresh raspberries
- 2 teaspoons lemon juice
- 4 ounces semisweet chocolate, chopped
Instructions
1. Prepare the Custard Base:
- In a medium saucepan, whisk together the eggs and sugar until pale and fully combined.
- Stir in the vanilla bean paste and salt, ensuring the mixture is smooth.
2. Heat the Cream:
- In a separate saucepan over medium heat, gently warm the whipping cream. Heat until small bubbles start to form around the edges, but do not let it boil.
3. Combine and Thicken:
- Gradually pour the warm cream into the egg mixture, whisking constantly to prevent the eggs from curdling.
- Return the saucepan to medium-low heat and stir continuously with a wooden spoon until the mixture thickens enough to coat the back of the spoon, approximately 6 to 8 minutes.
4. Melt the Chocolate:
- Remove the thickened custard base from the heat and add the chopped semisweet chocolate. Stir until the chocolate is completely melted and the mixture is smooth.
5. Prepare the Raspberries:
- In a small bowl, gently mash the raspberries with the lemon juice, ensuring they release their juices but still retain some texture.
6. Assemble and Serve:
- Pour the warm chocolate custard into individual serving dishes. Spoon the raspberry mixture over the top, allowing some of the vibrant juice to ripple through the custard.
- Chill the desserts in the refrigerator for at least 2 hours before serving to allow the flavors to meld and the custard to set.
