Irresistible Pan-Fried Bacon & Herb Breakfast Skillet
Ingredients
- 8 slices of bacon
- 4 large eggs
- 1 large potato, peeled and diced
- 1 red bell pepper, diced
- 1 small yellow onion, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt, to taste
- Freshly ground black pepper, to taste
- Finely chopped parsley, for garnish
Instructions
1. Prepare the Ingredients:
- Dice the potato, red bell pepper, and yellow onion.
- Chop parsley and set aside for garnish.
2. Prepare the Bacon:
- In a large skillet, lay out the 8 slices of bacon.
- Heat over medium heat and cook until crispy, about 5 minutes per side.
- Remove the bacon and set on a paper towel to drain. Reserve bacon fat in the skillet.
3. Cook Potatoes and Vegetables:
- Add 2 tablespoons of olive oil to the bacon fat in the skillet.
- Increase the heat to medium-high and add the diced potatoes.
- Cook for 10 minutes, stirring occasionally until golden brown.
- Add the diced red bell pepper and onion to the skillet.
- Season with garlic powder, thyme, rosemary, salt, and pepper.
- Sauté for another 5 minutes or until vegetables are tender.
4. Cook the Eggs:
- Crack 4 large eggs directly onto the potato and vegetable mixture in the skillet.
- Reduce heat to medium.
- Cover the skillet and cook until the egg whites are set, about 3 to 4 minutes.
5. Finishing Touches:
- Crumble the cooked bacon over the top of the eggs and vegetable mixture.
- Sprinkle with finely chopped parsley before serving.
