Decadent Zucchini Pineapple Chocolate Chip Loaf
Ingredients
- 1 cup zucchini, grated and thoroughly drained
- 3/4 cup crushed pineapple, drained
- 1 cup gluten-free flour blend
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup mixed nuts, chopped (such as walnuts and almonds)
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 cup light olive oil or melted coconut oil
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 tablespoon fresh herbs, finely chopped (such as mint or basil)
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C) and position a rack in the center. Grease a standard 9x5 inch loaf pan or line it with parchment paper for easy removal.
2. Prepare the Dry Ingredients
In a large mixing bowl, combine the gluten-free flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir in the chocolate chips and chopped nuts until well distributed.
3. Mix the Wet Ingredients
In a separate bowl, whisk together the grated zucchini, crushed pineapple, oil, beaten egg, and vanilla extract until smooth and well blended.
4. Combine Wet and Dry Ingredients
Pour the wet ingredients into the bowl of dry ingredients. Gently fold the mixture with a spatula until just combined. Be careful not to overmix, as this can affect the texture of the loaf.
5. Incorporate Fresh Herbs
