Garlic Shrimp Stir-Fry with Peaches and Vegetables
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 peaches, sliced
- 1 cup cottage cheese
- 3 cloves garlic, minced
- 1 medium zucchini, sliced
- 1 medium cucumber, sliced
- 1 cup corn kernels (fresh or canned)
- 1 medium carrot, thinly sliced
- 1/2 cup peas (fresh or frozen)
- 2 medium potatoes, diced
- 1 cup ranch dressing
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional garnish: lemon wedges
Instructions
1. Prepare Ingredients
- Slice peaches and set aside.
- Dice potatoes and pre-cook them: Boil them in water for approximately 10 minutes or until just tender. Drain and set aside.
- Thinly slice carrots, zucchini, and cucumber.
2. Marinate Shrimp
- In a bowl, combine shrimp, half the minced garlic, and a pinch of salt.
Set aside to marinate for about 10 minutes.
3. Make Stir Fry Base
- Heat olive oil in a large skillet over medium-high heat.
- Add remaining garlic, pre-cooked potatoes, zucchini, carrots, and peas.
- Stir-fry for 5–7 minutes until the vegetables are tender and slightly crisp.
4. Cook Shrimp and Mix Vegetables
- Add shrimp to the pan. Stir-fry for 3–4 minutes until shrimp are pink and cooked through.
5. Add Flavorings
- Stir in the corn, cucumber, and peach slices.
- Add salt and pepper to taste.
6. Finish with Ranch
- Drizzle in the ranch dressing while tossing everything to ensure even coating.
7. Garnish and Serve
- Serve hot, garnished with lemon wedges on the side.
- Pair with a dollop of cottage cheese on top for a creamy contrast.
