Oven-Baked Elote Cornbread with Queso Fresco & Chile-Lime Topping



Ingredients



- Nonstick cooking spray
- 1 box Marie Callender's Honey Butter Cornbread Mix
- 2 cups frozen charred corn, thawed
- 1 cup queso fresco, crumbled
- 1/4 cup pickled hot cherry peppers, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Tajín Clásico chile-lime seasoning

Instructions



1. Preheat Oven
Preheat your oven to 375°F (190°C).

2. Prepare Baking Dish
Lightly coat a 9x9 inch baking dish with nonstick cooking spray. Set aside.

3. Mix Cornbread Batter
In a large mixing bowl, prepare the Marie Callender's Honey Butter Cornbread Mix according to the package instructions.

4. Add Corn and Peppers
Gently fold in the thawed charred corn and chopped pickled hot cherry peppers into the cornbread batter until evenly distributed.

5. Bake Cornbread
Pour the cornbread batter into the prepared baking dish. Bake in the preheated oven for approximately 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

6. Prepare Topping
While the cornbread is baking, in a small bowl, combine mayonnaise, sour cream, and Tajín Clásico chile-lime seasoning. Mix until well blended and smooth.

7. Cool and Top Cornbread
Once baked, remove the cornbread from the oven and allow it to cool slightly for 5 minutes. Evenly spread the chile-lime mayonnaise mixture over the top of the warm cornbread.

8. Add Cheese
Sprinkle the crumbled queso fresco generously over the top of the cornbread.

9. Serve
