Ingredients
- 2 sheets ready-to-use pastry dough
- 1 cup pumpkin puree
- 1/2 cup light brown sugar, packed
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 cup sweet frosting (store-bought or homemade)
- 1 beaten egg (for egg wash)
Instructions
1. Prepare the Filling:
In a mixing bowl, combine the pumpkin puree, light brown sugar, pumpkin pie spice, and vanilla extract. Stir until all ingredients are well incorporated.
2. Assemble the Pastries:
Roll out the two pastry dough sheets on a lightly floured surface. Cut each sheet into 4 equal rectangles, creating 8 rectangles in total. Spoon about 2 tablespoons of the pumpkin mixture onto the center of 4 rectangles, spreading it evenly while leaving a small border around the edges.
3. Seal the Pastries:
Brush the borders with a small amount of beaten egg. Place a second rectangle over each filled rectangle, and press gently to seal the edges. Use the tines of a fork to crimp the edges, ensuring a tight seal.
4. Toast the Pastries:
Set your toaster to medium heat. Carefully place one or two pastries at a time into the toaster, depending on size. Toast for about 5-7 minutes, or until the pastries are golden brown and puffed. Remove with caution as they will be hot.
5. Frost the Pastries:
Let the pastries cool slightly for 3-5 minutes. Drizzle or spread the sweet frosting generously over each pastry.
