Spicy Cajun Shrimp Creole Delight

Ingredients

- 1 pound shrimp, peeled and deveined
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 2 tablespoons vegetable oil
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup tomato sauce
- 2 tablespoons canned chopped green chilis
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 2 bay leaves
- 1 teaspoon hot sauce

Instructions

1. Prepare the Vegetables
Begin by washing all produce. Chop the onion, green bell pepper, and celery into similar-sized pieces to ensure even cooking. Mince the garlic cloves.

2. Sauté the Aromatics
In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, celery, and green bell pepper. Sauté for about 4 minutes, until the vegetables are tender and the onion is translucent. Stir in the minced garlic and continue to cook for another 1 minute until fragrant.

3. Build the Sauce Base
Add the diced tomatoes with juice, tomato sauce, and green chilis to the skillet. Season this mixture with salt, black pepper, Cajun seasoning, Worcestershire sauce, and chili powder. Stir everything together until well combined.

4. Simmer the Creole Sauce
Toss in the bay leaves and bring the mixture to a gentle simmer over low heat. Allow it to cook uncovered for 20 minutes, stirring occasionally to prevent sticking. This will thicken the sauce and marry the flavors.

5. Cook the Shrimp
Stir in the shrimp and add a splash of hot sauce, adjusting the amount to suit your preference for spiciness. Cook for an additional 5-7 minutes or until the shrimp are pink and opaque.

6. Serve and Enjoy
Remove the bay leaves from the skillet. Serve the spicy Cajun shrimp creole hot, with a side of rice or crusty bread to soak up the delicious sauce.
