Golden Pan-Fried Paprika Potatoes with Garlic Aioli



Ingredients



- 4 medium-sized potatoes, peeled and diced
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon sweet paprika
- 1/2 teaspoon hot paprika
- 2 tablespoons all-purpose flour
- 1 cup stock (chicken or vegetable)
- 1 tablespoon vinegar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup garlic aioli

Instructions



1. Prepare the Potatoes:
- Rinse and peel the potatoes. Dice them into 1-inch cubes. Pat dry with a paper towel to ensure they are fully dry.

2. Pan Fry the Potatoes:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the diced potatoes carefully to avoid oil splatters. Fry for about 10 minutes, stirring occasionally, until they are golden brown on all sides. Remove the potatoes with a slotted spoon and set aside on a paper-towel-lined plate to drain excess oil.

3. Cook the Onion and Garlic:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the chopped onion and cook over medium heat until it becomes translucent, about 5 minutes.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.

4. Create the Paprika Sauce:
- Sprinkle the sweet paprika, hot paprika, and flour over the onions and garlic. Stir well to coat evenly.
- Gradually pour in the stock, stirring constantly to avoid lumps.
- Add vinegar, salt, and black pepper.
- Lower the heat and let the sauce simmer for 5 minutes, or until slightly thickened.

5. Combine and Serve:
- Return the fried potatoes to the skillet, gently tossing them in the paprika sauce until fully coated.
- Cook for an additional 3-5 minutes to ensure the potatoes soak up the flavors.
- Serve with a generous drizzle of garlic aioli.
