Smoked Salmon and Spinach Skillet Lasagna
Ingredients
- 8 ounces lasagna noodles (or alternative pasta shape)
- 6 ounces smoked salmon, thinly sliced
- 2 cups fresh spinach, roughly chopped
- 3 scallions, finely sliced
- 1 cup cottage cheese
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Pasta:
Bring a large pot of salted water to a boil over medium-high heat. Add the lasagna noodles and cook until al dente, approximately 8 minutes. Drain and set aside.
2. Saute the Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the scallions and sauté for 2 minutes until they are fragrant and slightly translucent. Add the chopped spinach and cook for an additional 3-4 minutes, or until wilted.
3. Combine Ingredients:
Add the cooked lasagna noodles to the skillet with the spinach and scallions. Gently fold in the cottage cheese, half of the Parmesan cheese, lemon zest, and a squeeze of lemon juice. Stir until evenly combined.
4. Layer with Smoked Salmon:
Tear the smoked salmon into bite-sized pieces and layer them throughout the pasta mixture in the skillet. Allow the mixture to heat through for another 3 minutes, stirring occasionally.
5. Finalize Seasoning:
Season the dish with salt and pepper to taste. Adjust lemon juice according to preference for extra brightness.
6. Serve:
Sprinkle the remaining Parmesan cheese over the top before serving. Ensure the skillet lasagna is served warm, optionally garnished with additional scallions or lemon wedges.
