Chilled Lettuce & Herb Pesto Wrap



Ingredients



- 6 large Romaine lettuce leaves
- 1 cup fresh basil leaves
- 1 cup fresh parsley leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 1 clove garlic, minced
- 1/3 cup extra-virgin olive oil
- Salt and pepper to taste
- 1/2 cup cherry tomatoes, halved
- 1 medium avocado, sliced
- 1/4 cup crumbled feta cheese
- Optional: 1 tablespoon lemon juice

Instructions



1. Prepare the Herb Pesto:
- In a food processor, combine basil, parsley, Parmesan cheese, pine nuts, and minced garlic.
- Pulse until ingredients are finely chopped.
- Gradually add olive oil while processing, creating a smooth paste.
- Season with salt and pepper to taste.
- Optional: Add lemon juice for a tangy flavor.

2. Prepare the Lettuce:
- Carefully wash and pat dry the Romaine lettuce leaves.
- Lay each leaf flat on a clean surface.

3. Assemble the Wraps:
- Spread about 1–2 tablespoons of herb pesto along the center of each lettuce leaf.
- Place a few slices of avocado and a few cherry tomato halves over the pesto.
- Sprinkle with crumbled feta cheese.

4. Rolling Technique:
- Start at the base of each lettuce leaf and gently roll up, keeping the filling secure inside.
- Secure with a toothpick if needed to prevent unrolling.

5. Chill and Serve:
- Place the wraps in the refrigerator for about 10-15 minutes to chill.
- Serve cold as a refreshing lunch option.
