Herb-Infused Cucumber and Hummus Open Sandwich



Ingredients



- 1 English cucumber, thinly sliced
- 1/2 medium onion, finely chopped
- 3 tablespoons lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 4 slices of your favorite bread
- 1 cup hummus

Instructions



1. Prepare the Herb Mixture:
- In a medium-sized bowl, combine the finely chopped onion, lemon juice, kosher salt, and black pepper.
- Add the chopped cilantro, parsley, and dill. Mix well to combine. Set aside for the flavors to meld.

2. Prepare the Cucumber:
- Thinly slice the English cucumber. For best results, use a mandoline to achieve even slices. Set aside.

3. Toast the Bread:
- Preheat a skillet over medium heat on the stove.
- Place the bread slices on the skillet and toast each side for about 2 minutes or until golden brown. Remove from heat.

4. Assemble the Open Sandwich:
- Spread an even layer of hummus over each toasted bread slice.
- Arrange cucumber slices on top of the hummus.
- Generously spoon the herb mixture over the cucumber slices, ensuring an even distribution.

5. Serve:
- Transfer the open sandwiches to a serving platter.
- Optionally, garnish with additional fresh dill for an extra touch of color.
- Serve immediately.
