Cheesy Spinach & Ricotta Stuffed Cannelloni Bake
Ingredients
- 12 cannelloni tubes
- 1 cup ricotta cheese
- 10 oz fresh spinach, chopped
- 1 large egg
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cups marinara sauce
- Salt and pepper, to taste
Instructions
1. Prepare the Spinach
- Preheat your oven to 375°F (190°C).
- Place a large pan over medium heat. Add the chopped spinach and cook until wilted, about 3-4 minutes.
- Once wilted, remove the spinach from heat and allow it to cool slightly. Once cooled, squeeze out excess moisture with your hands or a clean kitchen towel.
2. Prepare the Filling
- In a large mixing bowl, combine the ricotta cheese, wilted spinach, egg, half of the shredded mozzarella, half of the parmesan cheese, and Italian seasoning.
- Season with salt and pepper to taste. Mix the ingredients well until fully incorporated.
3. Stuff the Cannelloni Tubes
- Using a small spoon or a piping bag, fill each cannelloni tube with the ricotta-spinach mixture. Stuff them carefully to ensure they don't break. Set them aside.
4. Assemble the Dish
- Spread about 1/2 cup of marinara sauce on the bottom of a large baking dish.
- Arrange the stuffed cannelloni in a single layer over the sauce.
- Pour the remaining marinara sauce evenly over the cannelloni.
5. Add Cheese Topping and Bake
- Sprinkle the remaining mozzarella and parmesan cheese over the top of the cannelloni.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
6. Serve
- Once baked, remove the dish from the oven and allow it to cool for a few minutes before serving. Enjoy this cheesy, hearty delight!
