Baked Mediterranean Feast: Lamb and Merguez Couscous with Halloumi and Herb Garnish



Ingredients



- 1 pound lamb, cubed
- 4 merguez sausages
- 1 cup couscous
- 1/2 cup broccoli florets
- 4 oz halloumi cheese, sliced
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/2 cup tomatoes, diced
- 1/2 cup cucumber, diced
- 1 ripe peach, peeled and sliced
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped
- 1/4 cup pistachios, shelled and chopped
- 8 shrimp, peeled and deveined
- 1 cup gnocchi
- 1 banana, sliced into rounds
- 1/2 cup chocolate chunks

Instructions



1. Prepare the Oven:
Preheat the oven to 375°F (190°C).

2. Marinate and Roast the Meats:
In a large mixing bowl, combine the lamb cubes and merguez sausages. Add olive oil, minced garlic, salt, and pepper. Mix thoroughly.
Place the meats on a baking tray lined with parchment paper and roast in the oven for PT30M (30 minutes), or until browned and cooked through.

3. Prepare the Couscous:
While the meats are roasting, bring 1 1/2 cups of water to a boil in a saucepan. Stir in the couscous, cover, and remove from heat. Let it sit for PT5M (5 minutes), then fluff with a fork.

4. Roast the Vegetables and Halloumi:
On another baking tray, spread out broccoli florets, sliced halloumi, diced tomatoes, and shrimp. Drizzle with a little olive oil and a pinch of salt. Roast in the oven for PT15M (15 minutes).

5. Make the Herb and Nut Garnish:
In a small bowl, combine chopped cilantro, mint, and pistachios. Set aside.

6. Roast Banana and Chocolate:
Spread banana slices on a small baking dish, sprinkle with chocolate chunks, and bake in the oven for the last PT10M (10 minutes) along with the meats and veggies.

7. Assemble the Dish:
On a large serving platter, spread the couscous as the base. Arrange roasted meats, shrimp, and veggies on top. Garnish with herb and nut mixture. Serve the roasted banana and chocolate as a sweet side.
