Classic Beef Meatloaf with Tangy Glaze
Ingredients
- Nonstick cooking spray
- 1 medium white onion, finely chopped
- 1 medium carrot, grated
- 2 stalks celery, finely chopped
- 1/4 cup fresh parsley leaves, chopped
- 3 cloves garlic, minced
- 1 lb lean ground beef

- 1 teaspoon ground cumin
Instructions
1. Prepare the Oven and Pan: Preheat your oven to 350°F. Lightly spray a loaf pan with nonstick cooking spray to prevent sticking.
2. Sauté Vegetables: In a skillet over medium heat, add a small amount of oil. Sauté the chopped onion, grated carrot, and celery for about 5 minutes until they are soft and fragrant. Add the garlic and cook for an additional 1 minute. Remove from heat and let cool slightly.
3. Mix the Meatloaf Ingredients: In a large mixing bowl, combine the sautéed vegetables with the ground beef, breadcrumbs, beaten egg, Worcestershire sauce, parsley, kosher salt, pepper, and ground cumin. Mix until just combined, being careful not to overwork the meat.
4. Shape the Meatloaf: Transfer the beef mixture into the prepared loaf pan, pressing it down gently to ensure it is evenly spread.
5. Prepare the Glaze: In a small bowl, whisk together the barbecue sauce (or ketchup), brown sugar, and Dijon mustard until smooth.
6. Glaze and Bake: Spread the glaze evenly over the top of the meatloaf. Place in the preheated oven and bake for approximately 1 hour, or until the internal temperature reads 160°F when checked with a meat thermometer.
7. Rest and Serve: Allow the meatloaf to rest for about 10 minutes in the pan before slicing. This will help retain its shape and moisture.
