Charcoal-Grilled Lemon Paprika Chicken
Ingredients
- 4 large chicken breasts
- 4 cloves of garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 large lemon, juiced and zested
- Extra lemon wedges for serving
Instructions
1. Prepare the Marinade:
In a bowl, combine the minced garlic, olive oil, salt, black pepper, paprika, lemon juice, and lemon zest. Mix well to create a marinade.
2. Marinate the Chicken:
Place the chicken breasts in a large, resealable plastic bag. Pour the marinade over the chicken, seal the bag, and massage the marinade into the meat to ensure even coverage. Refrigerate for at least 1 hour, preferably overnight, to allow flavors to develop.
3. Preheat the Charcoal Grill:
Prepare your charcoal grill for medium-high heat. Ensure the coals are evenly distributed and have a nice layer of white ash before grilling.
4. Grill the Chicken:
Remove the chicken from the marinade and let any excess liquid drip off. Place the chicken breasts on the grill grates. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has developed a beautiful charred appearance from the grill.
5. Rest and Serve:
Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute. Serve the chicken with additional lemon wedges on the side for extra flavor.
