Irresistible Oven-Baked Chocolate Nut Energy Bars
Ingredients
- 1 cup rolled oats
- 1/3 cup brown rice syrup
- 1/3 cup creamy peanut butter
- 2 tablespoons chia seeds
- 2 tablespoons ground flax seeds
- 1/3 cup chopped almonds
- 1/3 cup peanuts
- 1/4 cup sunflower seeds
- 1/4 cup honey
- 1/2 cup dark chocolate chips
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing some extra paper to hang over the sides for easy removal later.
2. Combine Dry Ingredients
- In a large mixing bowl, combine the rolled oats, chia seeds, ground flax seeds, chopped almonds, peanuts, sunflower seeds, and dark chocolate chips. Stir well to evenly distribute the ingredients.
3. Prepare the Wet Mixture
- In a medium saucepan, combine the brown rice syrup, peanut butter, honey, cocoa powder, and vanilla extract. Place over medium heat, stirring constantly, until the mixture is smooth and begins to bubble slightly, about 3-4 minutes.
4. Mix it All Together
- Pour the warm syrup and peanut butter mixture over the dry ingredients in the mixing bowl. Use a spatula to mix until all the dry ingredients are well-coated.
5. Transfer to Baking Pan
- Transfer the mixture into the prepared baking pan. Press down firmly with the back of a spoon or your hands (if the mixture is not too hot) to ensure an even layer.
6. Bake the Energy Bars
- Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown.
7. Cool and Cut
- Remove the pan from the oven and let it cool completely on a wire rack. Once cooled, use the parchment paper overhang to lift the bar slab from the pan. Cut into 12 even bars.
