Banana and Apricot Oven-Baked Snack Bars
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup dried apricots, finely chopped
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven: Set your oven to 350°F (175°C) and allow it to preheat. This ensures the bars bake evenly.
2. Prepare the Baking Pan: Grease an 8x8-inch baking pan or line it with parchment paper for easy removal and cleanup.
3. Mix Dry Ingredients: In a medium-sized bowl, whisk together the flour, sugar, baking soda, and salt. Ensure there are no lumps for a smooth batter.
4. Combine Wet Ingredients: In a separate large bowl, mash the bananas until smooth. Add the chopped dried apricots, egg, melted butter, and vanilla extract. Mix until fully combined and smooth.
5. Incorporate Dry into Wet: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid over-mixing to keep the bars tender.
6. Transfer to Pan: Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
7. Bake: Place the pan on the middle rack of the preheated oven. Bake for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool and Slice: Allow the bars to cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely. Once cooled, cut into squares or bars.
