Cheddar-Chicken Broccoli Rice Stuffed Squash



Ingredients



- 2 cups tillamook medium cheddar cheese, shredded
- 2 cups cooked chicken, diced
- 1 cup broccoli florets, chopped
- 2 cups cooked rice
- 2 small butternut squash, halved and seeds removed
- 1 cup mashed potatoes
- 1 cup english peas
- 1 cup crackers, crushed
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions



1. Preheat the Oven
Preheat your oven to 375°F (190°C).

2. Prepare the Butternut Squash
Coat the cut sides of the squash halves with olive oil and sprinkle with salt and pepper. Place them cut-side down on a baking sheet lined with parchment paper.

3. Roast the Squash
Roast the butternut squash in the oven for approximately 45 minutes, or until the flesh is tender and can be easily pierced with a fork. Remove from the oven and let cool slightly.

4. Prepare the Filling
In a large mixing bowl, combine the diced chicken, cooked rice, broccoli florets, mashed potatoes, and English peas. Add 1 1/2 cups of shredded cheddar cheese into the mixture, reserving 1/2 cup for topping. Season with salt and pepper to taste.

5. Assemble the Stuffed Squash
Carefully scoop out some of the flesh from each butternut squash half, creating a space for the filling. Be sure to leave a sturdy shell to hold the filling. Gently fold the scooped squash into the filling mixture.

6. Stuff the Squash
Spoon the filling mixture generously into each squash half. Sprinkle the remaining shredded cheddar cheese over the top.

7. Top with Crushed Crackers
Evenly distribute the crushed crackers over the cheese-topped stuffed squash for a crunchy texture.

8. Bake the Stuffed Squash
Place the stuffed squash back on the baking sheet and return to the oven. Bake for an additional 20 minutes, or until the cheese is melted and bubbling, and the top is golden brown.

9. Serve
Remove from the oven and allow to cool for a few minutes. Serve warm as a satisfying snack or appetizer.
