Crunchy Berry & Chocolate Yogurt Clusters
Ingredients
- 1 cup Lucky Charms cereal
- 1 cup Reese's Puffs cereal
- 1 cup mixed fresh berries (such as strawberries, blueberries, and raspberries)
- 2 tablespoons hemp seeds
- 1/2 cup mixed nuts (such as almonds, walnuts, and pecans), chopped
- 1 cup Greek yogurt
- 2 tablespoons honey
- 1/4 cup freeze-dried fruit, crumbled
- 2 tablespoons peanut butter
- 1/4 cup shaved chocolate
- 1/4 cup mini chocolate chips
Instructions
1. Preheat Oven: Set your oven to 275°F (135°C) to lightly toast the cereal and nuts.
2. Prepare Cereal Nut Mix: In a large mixing bowl, combine the Lucky Charms, Reese's Puffs, and chopped mixed nuts. Spread this mixture evenly on a baking sheet lined with parchment paper.
3. Oven Toasting: Place the baking sheet in the preheated oven and toast for about 10 minutes, stirring halfway through. This step enhances the flavors and crunch. Remove from oven and let it cool to room temperature.
4. Mix Wet Ingredients: In another bowl, whisk together Greek yogurt, honey, and peanut butter until fully blended and smooth.
5. Combine & Fold: Gently fold the cooled cereal nut mixture, fresh berries, hemp seeds, and crumbled freeze-dried fruit into the yogurt mixture, ensuring even coverage for every piece.
6. Prepare for Freezing: Using a spoon or a cookie scoop, form small clusters (about 2-inch in diameter) and place them on a baking sheet lined with parchment paper. Ensure the clusters are spaced at least 1 inch apart.
7. Final Garnish: Sprinkle each cluster with shaved chocolate and mini chocolate chips for added texture and flavor.
8. Freeze: Transfer the baking sheet to the freezer and let the clusters set for about 1 hour, or until they are firm to the touch.
9. Serve: Enjoy the clusters immediately once set. These treats are great for a quick dessert pick-me-up or a sweet snack.
