Homemade Spicy Chili Vinegar Snack Sauce
Ingredients
- 10 fresh chili peppers, chopped
- 1 cup distilled white vinegar
- 1/8 teaspoon potassium sorbate
- 1/8 teaspoon sodium bisulfite
Instructions
1. Prepare the Chili Peppers:
- Wash the chili peppers thoroughly and pat them dry with a clean kitchen towel.
- Remove the stems and chop the peppers into small, even pieces. You can include the seeds for extra heat.
2. Infuse the Vinegar:
- Pour 1 cup of distilled white vinegar into a medium-sized saucepan.
- Add the chopped chili peppers to the vinegar.
- Bring the mixture to a gentle simmer over medium heat for about 5 minutes. This step allows the flavors of the peppers to infuse into the vinegar.
3. Cool and Blend:
- Remove the saucepan from the heat and let the mixture cool to room temperature.
- Transfer the cooled mixture to a blender, and blend until smooth. If you prefer a chunkier texture, blend less time.
4. Strain the Sauce:
- Pour the blended mixture through a fine mesh strainer into a clean bowl to remove any solid bits for a smoother sauce.
5. Preserve with Additives:
- Return the strained sauce to the saucepan.
- Stir in 1/8 teaspoon of potassium sorbate and 1/8 teaspoon of sodium bisulfite. These will help with preservation, extending the shelf life of your sauce.
6. Store and Enjoy:
- Pour the sauce into a sterilized bottle or jar with a tight-fitting lid.
- Store it in a cool, dark place for up to 6 months.
