Crock Pot Italian Sausage and Ricotta Tortellini Delight
Ingredients
- 1 lb Italian sausage, crumbled
- 1 lb chicken-based sausages, sliced
- 1 cup Ricotta cheese
- 1 package (12 oz) cheese tortellini
- 1 can (14 oz) tomato sauce
- 1 cup beef broth
- 1 cup creamed corn
- 1 red onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp lime juice
- 1 tbsp honey
- 1/2 tsp chili spices
- 1 tsp dried basil
- 1/4 cup fresh cilantro, chopped
- 2 tbsp butter
- Salt and pepper to taste
- Grated Parmesan cheese for topping
- 2 tbsp sour cream (optional)
Instructions
1. Preparation:
- In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the crumbled Italian sausage and sliced chicken-based sausages. Cook for about 5-7 minutes until browned. Drain excess fat.
- In the same skillet, add the remaining butter and sauté the chopped red onion and minced garlic until fragrant and translucent, about 3-4 minutes.
2. Crock Pot Setup:
- In the crock pot, combine the browned sausages, sautéed onions, and garlic.
- Stir in tomato sauce, beef broth, creamed corn, lemon juice, lime juice, honey, chili spices, dried basil, and 1/2 of the chopped cilantro. Mix well.
3. Cooking:
- Set the crock pot to low heat and cover. Cook for approximately 4 hours (PT4H).
- After 4 hours, increase the heat to high, add the tortellini, and cook for an additional 30 minutes (PT30M) until the tortellini is tender.
4. Final Touches:
- Gently stir in the Ricotta cheese. Allow it to melt and blend into the sauce.
- Taste for seasoning and add salt and pepper as needed.
5. Serving:
- Serve hot, garnished with fresh cilantro and grated Parmesan cheese.
- Optionally, add a dollop of sour cream for extra creaminess.
