Oven-Roasted Ginger-Cherry Glazed Chicken Thighs
Ingredients
- 6 chicken thighs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons oil
- 4 shallots, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1 cup cherries, pitted and halved
- 1/4 cup cherry syrup
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1/2 cup cilantro, chopped
- 2 scallions, sliced
- 1 jalapeño, thinly sliced
- 1/4 cup fresh mint leaves
Instructions
1. Prepare Ingredients:
Preheat your oven to 375°F (190°C). Pat dry the chicken thighs with paper towels. Season them with salt and black pepper on both sides.
2. Searing the Chicken:
In a large oven-safe skillet, heat the oil over medium-high heat. Place the chicken thighs skin-side down and sear for 3-4 minutes or until the skin turns golden brown. Flip the thighs and sear the other side for another 2 minutes. Transfer the chicken to a plate.
3. Cooking the Aromatics:
In the same skillet, add the sliced shallots, minced garlic, and grated ginger. Sauté for about 2 minutes until the shallots become translucent and the mixture is fragrant.
4. Making the Glaze:
Add the cherries, cherry syrup, soy sauce, and rice vinegar to the skillet. Stir well, scraping up any browned bits from the bottom of the pan. Allow the mixture to simmer for 5 minutes, letting the cherries soften and the flavors meld.
5. Roasting:
Return the chicken thighs to the skillet, nestling them into the glaze. Spoon some of the glaze over each thigh. Place the skillet in the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
6. Finishing Touches:
Remove the skillet from the oven. Sprinkle the chopped cilantro, sliced scallions, jalapeño, and fresh mint leaves over the chicken. Allow the dish to rest for 5 minutes before serving.
