Zesty Lemon Garlic Roasted Chicken



Ingredients



- 4 chicken breasts, bone-in, skin on
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 lemon, zested and juiced

Instructions



1. Preheat the Oven
- Preheat your oven to 400°F (200°C).

2. Prepare the Marinade
- In a small bowl, combine olive oil, minced garlic, salt, black pepper, paprika, lemon zest, and lemon juice. Mix well to form a uniform marinade.

3. Marinate the Chicken
- Pat the chicken breasts dry with paper towels and place them in a large bowl or dish.
- Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Cover and let marinate for at least 30 minutes in the refrigerator.

4. Roast the Chicken
- Place the marinated chicken breasts on a baking sheet lined with parchment paper or aluminum foil, skin side up.
- Roast in the preheated oven for around 35 minutes, or until the internal temperature reaches 165°F (75°C).

5. Broil for Crispy Skin
- For extra crispy skin, switch the oven to broil for the last 3–5 minutes of cooking, keeping a close eye to prevent burning.

6. Rest and Serve
- Remove the chicken from the oven and let rest for 5 minutes before serving to allow the juices to redistribute.
