Spicy Southwest Beef Taco Salad with Avocado Dressing
Ingredients
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon fine sea salt
- 2 tablespoons avocado oil
- 1 pound lean ground beef
- 2 tablespoons tomato paste
- 1/2 cup chicken stock
- 1 head lettuce, chopped
- 1 cup pico de gallo
- 2 tomatoes, diced
- 1 cup Mexican blend shredded cheese
- 1 avocado, sliced
- 1 cup tortilla chips, crumbled
- 1/2 cup cilantro lime dressing
Instructions
1. Prepare the Spice Mix:
- In a small bowl, combine the chili powder, cumin, smoked paprika, garlic powder, dried oregano, and fine sea salt. Mix well and set aside.
2. Brown the Beef:
- In a large skillet, heat the avocado oil over medium-high heat. Add the lean ground beef to the skillet and cook, breaking it apart with a spatula, until browned and fully cooked, about 7 minutes.
3. Flavor the Beef:
- Once the beef is browned, reduce the heat to medium. Add the prepared spice mix to the skillet. Stir well to coat the beef.
4. Simmer with Sauce:
- Add the tomato paste and chicken stock to the skillet. Stir everything together, allowing the mixture to simmer for 5 minutes until the sauce thickens and coats the beef.
5. Assemble the Salad:
- On a large serving platter or individual plates, arrange a bed of chopped lettuce. Evenly distribute the beef mixture over the lettuce.
6. Add Fresh Ingredients:
- Top the beef with pico de gallo, diced tomatoes, and shredded Mexican blend cheese.
7. Garnish & Serve:
- Add slices of avocado and sprinkle the crumbled tortilla chips over the salad. Drizzle with cilantro lime dressing just before serving.
