Oven-Roasted Turkey Breast with Rosemary and Potato Starch Glaze

- 2 lbs turkey breast, skin-on
- 4 cups water
- 2 tablespoons sea salt
- 3 tablespoons potato starch
- 2 cups turkey broth
- 1 teaspoon rosemary extract

Instructions



1. Prepare the Turkey:

Preheat your oven to 350°F (175°C). Rinse the turkey breast under cold water and pat dry with paper towels.

2. Season the Turkey:

In a bowl, mix sea salt with water to create a brine. Submerge the turkey breast in the brine, ensuring it's fully covered. Let it soak for about 15 minutes, then remove and pat dry again. Discard the brine.

3. Create the Glaze:

In a small saucepan over low heat, combine turkey broth and rosemary extract. Gradually whisk in the potato starch until the mixture thickens into a smooth glaze.

4. Roast the Turkey:

Place the turkey breast in a roasting pan, skin side up. Use a brush to apply a generous layer of the rosemary glaze over the turkey. Reserve some glaze for later. Roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (75°C), basting with more glaze halfway through.

5. Rest and Serve:
