Stove-Top Lemon Herb Chicken with Garlic Mashed Potatoes
Ingredients
For the Lemon Herb Chicken:
- 4 boneless, skinless chicken breasts
- 2 teaspoons olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme

- 4 medium russet potatoes, peeled and diced
- 4 cloves garlic, peeled
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Prepare the Lemon Herb Chicken:
1. In a small bowl, mix the lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.
2. Place the chicken breasts between two sheets of plastic wrap and use a meat mallet to pound them to even thickness.
3. Coat each chicken breast with the lemon herb mixture, ensuring even coverage. Let them marinate for at least 10 minutes.
4. Heat olive oil in a large skillet over medium heat.
5. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F).
6. Remove the chicken from the skillet and let rest for a few minutes before slicing.
Prepare the Garlic Mashed Potatoes:
1. Place diced potatoes and garlic cloves in a large pot. Cover with water and add a pinch of salt.
2. Bring to a boil over medium-high heat. Cook for 15-20 minutes, or until potatoes are tender and easily pierced with a fork.
3. Drain the potatoes and garlic, returning them to the pot.
4. Add butter and mash the potatoes and garlic until smooth.
5. Gradually mix in the heavy cream, salt, and black pepper. Taste and adjust seasoning if needed.
