Classic Eggs Benedict with Hollandaise Sauce
Ingredients
For the Hollandaise Sauce:
- 3 egg yolks
- 1 tablespoon lemon juice
- 1 tablespoon white wine
- 1 tablespoon warm water
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon sea salt
- 1/8 teaspoon white pepper
- Pinch of cayenne pepper
For the Eggs Benedict:
- 4 large eggs
- 1 tablespoon white vinegar
- 4 slices of Canadian bacon
- 2 English muffins, split
- 2 tablespoons butter, softened
- 1 tablespoon chives, finely chopped
- 1 tablespoon parsley, finely chopped
Instructions
1. Prepare the Hollandaise Sauce:
- In a heatproof bowl, whisk together the egg yolks, lemon juice, white wine, and warm water until well combined.
- Place the bowl over a saucepan of simmering water, ensuring the bowl doesn't touch the water.
- While whisking continuously, gradually add the melted butter to the egg yolk mixture until the sauce thickens. This should take about 5 minutes.
- Season the Hollandaise with sea salt, white pepper, and a pinch of cayenne pepper. Remove from heat and keep warm.
2. Prepare the Eggs Benedict:
- Fill a large saucepan with water and bring it to a gentle simmer. Add the white vinegar.
- Crack the eggs into individual ramekins or small bowls.
- Create a gentle whirlpool in the simmering water using a spoon and gently slide each egg into the center.
- Poach the eggs for about 3 minutes or until the whites are set and the yolks remain soft.
- Remove the eggs with a slotted spoon and set aside on a plate lined with a paper towel.
3. Toast and Assemble:
- While eggs are poaching, heat a skillet over medium heat and cook the Canadian bacon until lightly browned on both sides, about 3 minutes.
- Toast the English muffins until golden brown. Spread butter on each half.
- Place a slice of Canadian bacon on each toasted muffin half, carefully place a poached egg on top, and generously spoon the Hollandaise sauce over the eggs.
- Garnish with chopped chives and parsley before serving.
