Ingredients
- 2 medium red bell peppers
- 2 medium orange bell peppers
- 2 medium poblanos
- 2 medium Hungarian peppers
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt

Instructions
1. Preheat the Oven: Set your oven to 400°F (200°C) and allow it to preheat completely, ensuring it reaches the right temperature for even roasting. This should take about 10 minutes.
2. Prepare the Peppers: Wash all the peppers thoroughly under cold running water. Pat them dry with a clean kitchen towel to remove any excess moisture, which will help them roast better.
3. Slice the Peppers: Cut each pepper in half lengthwise. Remove the seeds and trim away the white membranes. Slice the peppers into long strips, about 1/2-inch wide, for even cooking.
4. Season the Peppers: In a large mixing bowl, combine the pepper strips, olive oil, kosher salt, and freshly ground black pepper. Toss the mixture well until each piece is evenly coated with the olive oil and seasonings.
5. Arrange for Roasting: Spread the seasoned pepper strips in a single layer on a large baking sheet, ensuring they have enough space and are not overlapping to promote even roasting.
