Quick and Creamy Microwave Queso Dip
Ingredients
- 1 can (10 oz) RO*TEL Original Diced Tomatoes & Green Chilies, undrained
- 1 lb Velveeta, cut into 1-inch cubes
- Tortilla chips, for serving
Instructions
1. Prepare Ingredients: Open the can of RO*TEL Original Diced Tomatoes & Green Chilies and do not drain. Cut the Velveeta into approximately 1-inch cubes. This will help it melt evenly and quickly in the microwave.
2. Combine Ingredients: In a large microwave-safe bowl, combine the entire can of RO*TEL (including the liquid) with the Velveeta cubes. Make sure that the Velveeta is distributed evenly in the bowl for consistent melting.
3. Microwave Setting: Cover the microwave-safe bowl lightly with a microwave-safe lid or plastic wrap, ensuring there is a slight vent to allow steam to escape safely.
4. Microwaving the Mixture: Microwave on high for PT5M (5 minutes). Halfway through cooking, at the PT2M30S (2 minutes and 30 seconds) mark, carefully remove the bowl using oven mitts, uncover it, and stir the mixture well to help the cheese melt evenly.
5. Finishing Touches: Return the bowl to the microwave for the remaining time. Once the cheese is completely melted and the mixture is smooth, carefully remove from the microwave. Stir once more to ensure a creamy, cohesive dip.
6. Serving: Allow the dip to cool slightly for a minute or two before serving to enhance the flavor and avoid burns. Serve the warm queso dip immediately with tortilla chips for dipping.
