Savory Stove-Top Hearty Beef Chili
Ingredients
- 3 tablespoons olive oil
- 1 pound ground beef
- 2 medium onions, diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) chopped tomatoes
- 1 can (14.5 oz) tomatoes with chilies
- 2 cans (15 oz each) beans, drained and rinsed
- 2 cups chicken stock
- 2 bay leaves
- 1/3 cup instant cornmeal
- 1 tablespoon fish sauce
Instructions
1. Heat the Olive Oil
In a large pot over medium heat, add the olive oil. Let it heat for 1-2 minutes until shimmering.
2. Brown the Ground Beef
Add the ground beef to the pot. Cook and stir for about 7 minutes until browned and cooked through. Break it into small chunks with a wooden spoon during cooking.
3. Sauté the Aromatics
Add the diced onions to the beef. Sauté for 5 minutes until the onions are translucent. Stir in the minced garlic and cook for another 1 minute.
4. Incorporate Tomato Paste and Spices
Stir in the tomato paste, chili powder, cumin, garlic powder, onion powder, and oregano. Let cook for 2 minutes, allowing the flavors to meld.
5. Add Tomatoes and Beans
Pour in the diced tomatoes, chopped tomatoes, and tomatoes with chilies. Add the canned beans and stir well to combine.
6. Simmer with Stock and Bay Leaves
Add the chicken stock and bay leaves. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 45 minutes, stirring occasionally.
7. Thicken with Cornmeal
Remove the bay leaves. Gradually stir in the instant cornmeal. Let the chili thicken for an additional 10 minutes, stirring occasionally.
8. Finish with Fish Sauce
Add the fish sauce to the pot. Stir well to enhance the depth of flavor. Taste and adjust seasonings if necessary.
