Spicy Pickled Eggs with Dill and Jalapeño

Ingredients

- 6 large hard-boiled eggs, peeled
- 1 small red onion, thinly sliced
- 2 garlic cloves, smashed
- 3 tablespoons fresh dill, chopped
- 1 teaspoon whole black peppercorns
- 2 cups distilled white vinegar
- 1/2 cup granulated sugar
- 1 tablespoon salt
- 1 hot red pepper, sliced
- 1 jalapeño, sliced
- 1 teaspoon crushed red pepper flakes

Instructions

1. Prepare the Pickling Jar: Ensure your pickling jar is clean and dry. A 1-quart mason jar works optimally for this purpose.

2. Layer the Ingredients: Place half of the red onion slices and one smashed garlic clove at the bottom of the jar. Gently add the peeled hard-boiled eggs, arranging them in a single layer.

3. Add Flavorings: Sprinkle the fresh dill, whole black peppercorns, and the remaining garlic over the eggs. Add the hot red pepper, jalapeño slices, crushed red pepper flakes, and the rest of the red onion.

4. Prepare the Pickling Brine: In a medium saucepan over medium heat, combine the distilled white vinegar, granulated sugar, salt, and any remaining dill stems. Stir the mixture until the sugar dissolves completely, approximately 3 minutes.

5. Boil the Brine: Increase the heat to bring the mixture to a boil. Once boiling, remove the saucepan from the heat and allow it to sit for 1 minute.

6. Pour and Seal: Carefully pour the hot brine over the eggs in the jar, ensuring all ingredients are submerged. Tap the jar gently on the countertop to release any trapped bubbles. Seal the jar tightly with its lid.

7. Pickling Process: Allow the eggs to cool to room temperature before placing them in the refrigerator. Let them pickle for at least 48 hours for optimal flavor infusion—72 hours for extra tang and heat.

8. Serve and Enjoy: Serve these spicy pickled eggs as a unique snack or garnish. Pair them with crusty bread and a fresh salad for a delightful experience.
