Oven-Roasted Mediterranean Vegetable Medley for Dinner
Ingredients

Instructions
1. Preheat the Oven:
Set your oven to 425°F (220°C) and let it heat fully before placing the vegetables inside.
2. Prepare the Vegetables:
Clean, peel, and chop the carrots, broccoli, cauliflower, winter squash, eggplant, Brussels sprouts, and bell peppers as noted in the ingredient list.
3. Mix the Vegetables:
