Sautéed Garlic Lemon Chicken with Spinach
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced
- 1/4 cup chicken broth
- 4 cups fresh spinach leaves
- 1 tablespoon unsalted butter
Instructions
1. Prepare Chicken Breasts: Pat the chicken breasts dry with paper towels. Season each side with salt, pepper, and garlic powder.
2. Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts. Sauté for about 6–7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside.
3. Sauté Garlic: In the same skillet, reduce heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant.
4. Add Lemon Juice & Broth: Pour in the lemon juice and chicken broth, stirring to deglaze the pan and incorporate the flavors from the bottom of the skillet. Let the mixture simmer for 2 minutes.
5. Wilt Spinach: Add fresh spinach leaves to the skillet. Cook, stirring occasionally, until the spinach is wilted, about 3 minutes.
6. Finish with Butter: Stir in the unsalted butter until melted and the sauce is smooth.
7. Combine & Serve: Return the chicken breasts to the skillet, turning them over in the sauce to coat. Cook for another 1 minute to heat through. Serve the chicken topped with spinach and drizzled with the garlic lemon sauce.
