Oven-Baked Lemon Chicken with Gnocchi & Sun-Dried Tomato Sauce
Ingredients
- 4 boneless, skinless chicken breasts
- 2 lemons, juiced
- 2 tablespoons olive oil
- 1/2 cup grated cheese (Parmesan or Romano recommended)
- Salt and pepper, to taste
- 1 pound gnocchi
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup enchilada sauce
- 2 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 pound asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1 cup spinach
- 2 tablespoons bang bang sauce
- Sesame seeds, for garnish
- 2 teaspoons lime juice
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Marinate the Chicken
In a large bowl, combine lemon juice, olive oil, salt, and pepper. Add the chicken breasts, ensuring they are thoroughly coated. Set aside to marinate for 10 minutes.
3. Prepare the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, approximately 2-3 minutes. Drain and set aside.
4. Make the Sun-Dried Tomato Sauce
In a medium saucepan over medium heat, add a tablespoon of olive oil. Add the minced garlic and chopped onion and sauté until the onion becomes translucent, about 5 minutes. Add the sun-dried tomatoes and enchilada sauce; simmer for 5 minutes. Stir in the lime juice and remove from heat.
5. Sear the Chicken
In an ovenproof skillet over medium-high heat, sear marinated chicken breasts for 3-4 minutes on each side until golden brown.
6. Bake the Chicken and Vegetables
Arrange the asparagus and cherry tomatoes around the chicken in the skillet. Pour the sun-dried tomato sauce over the chicken and sprinkle grated cheese on top. Bake in the oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
7. Prepare Spinach and Gnocchi Mix
In a large mixing bowl, combine cooked gnocchi, spinach, bang bang sauce, and cilantro. Toss well to coat.
8. Serve
Arrange the spinach and gnocchi mix on a serving platter, placing the baked chicken breasts on top. Spoon the asparagus, cherry tomatoes, and sauce over the dish. Garnish with sesame seeds and any remaining cilantro.
