Crispy Fusion Egg Roll Ramen with Spicy Bang Bang Chicken
Ingredients
Main Ingredients:
- 2 packs of ramen noodles
- 4 egg rolls (store-bought or homemade)
- 1/2 cup bang bang sauce
- 1 cup cooked chicken, diced
- 1/2 cup chopped apples
- 1/4 cup celery, finely chopped
- 1/4 cup grapes, halved
- 1/4 cup pecans, toasted and chopped
Sauce & Garnish:
- 4 tablespoons bang bang sauce (additional for drizzling)
- 1 tablespoon chamoy
- 2 sprigs rosemary, finely chopped
- 1 Hibiscus Margarita (for garnish)
Others:
- 6 eggs
- 4 slices sourdough bread
- Cooked green chile cheddar sourdough and rosemary asiago sourdough, crumbled (optional)
- Salt and pepper to taste
Instructions
1. Prepare the Ramen and Egg Rolls:
- Boil the ramen noodles according to package instructions without the seasoning packet. Drain and set aside.
- Simultaneously, pan-fry or bake the egg rolls in a preheated skillet on medium heat until crispy and golden, about PT10M (10 minutes). Set aside to cool slightly.
2. Prepare the Chicken Waldorf Salad:
- In a mixing bowl, combine diced cooked chicken, chopped apples, celery, grapes, and pecans. Mix with 2 tablespoons of bang bang sauce until evenly coated. Set aside.
3. Create the Egg Mixture:
- In another bowl, whisk together the eggs with a pinch of salt and pepper.
4. Cook a Fusion Ramen-Egg Omelette:
- Heat a large non-stick skillet over medium heat. Pour in the egg mixture and allow to set slightly, PT3M (3 minutes).
- Once the eggs begin to firm up, add the drained ramen noodles, crumbled optional sourdough, and chopped rosemary to one half of the omelette. Gently fold over and continue cooking until the eggs are fully set PT5M (5 minutes).
5. Assemble the Lunch:
- Place slices of sourdough bread on a clean surface. Spread a light layer of bang bang sauce on each slice.
- Layer with grilled cheese fillings, and toast on the stove until golden and cheese is melted, PT5M (5 minutes).
6. Plating:
- On a serving plate, place the egg roll ramen omelette, and add a slice of the grilled cheese sandwich. Top generously with chicken Waldorf salad.
- Drizzle additional bang bang sauce and chamoy over the top for that extra zing.
- Serve with the Hibiscus Margarita as a garnish or drink accompaniment.
