Cheesy Beef & Orzo Stuffed Bell Peppers



Ingredients



- 1 lb ground beef
- 1 cup orzo pasta
- 1 cup rice
- 4 large bell peppers
- 1 cup beef broth
- 1 cup tomato stew
- 1 cup assorted veggies (e.g., zucchini, carrot, onion), diced
- 1 cup broccoli florets, chopped
- 1 tablespoon fajita seasoning
- 1 tablespoon mixed herbs (e.g., basil, oregano, thyme)
- 1 cup cheddar cheese, shredded
- 1 cup parmesan cheese, grated
- 1 head of lettuce, for serving
- 1 loaf French bread, sliced, for serving

Instructions



1. Prepare the Bell Peppers
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

2. Cook the Orzo and Rice
- In a medium pot, combine 1 cup of orzo pasta with 1 cup of rice.
- Add 2 cups of water and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes until cooked.
- Drain any excess water and set aside.

3. Cook the Ground Beef
- In a large skillet over medium heat, cook 1 lb of ground beef until browned, about 8-10 minutes.
- Drain excess fat from the skillet.

4. Combine Ingredients
- Add 1 cup of diced assorted veggies and 1 cup of chopped broccoli florets to the skillet with the beef. Cook for 5 minutes, stirring occasionally.
- Stir in 1 tablespoon of fajita seasoning and 1 tablespoon of mixed herbs.
- Pour in 1 cup of beef broth and 1 cup of tomato stew. Simmer for 10 minutes.
- Mix in the cooked orzo and rice, along with ½ cup of cheddar cheese and ½ cup of parmesan cheese.

5. Stuff the Peppers
- Preheat the stove to medium heat.
- Spoon the beef and orzo mixture evenly into the prepared bell peppers.

6. Cook the Stuffed Peppers
- Place the stuffed peppers in a large, deep skillet or pot.
- Add ¼ cup of water to the bottom of the skillet to prevent sticking and cover with a lid.
- Cook on medium heat for 30 minutes until the peppers are tender.

7. Finish and Serve
- Remove the lid and sprinkle the remaining cheddar and parmesan cheeses over the stuffed peppers.
- Cook covered for an additional 5 minutes, allowing the cheese to melt.
- Serve each stuffed pepper on a bed of lettuce leaves with French bread slices on the side.
