Classic Stove-Top Beef and Bean Chili
Ingredients
Main Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef
- 1 red bell pepper, chopped
- 2 tablespoons tomato paste
- 1 can (14.5 oz) diced tomatoes

Spices:

Toppings:
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup sour cream
- 1/2 cup Greek yogurt
- 1 cup shredded cheese (cheddar or Mexican blend)
- Sliced jalapeños, to taste
- Tortilla chips for serving
Instructions
1. Prepare the Ingredients:
- Dice the onion and red bell pepper.
- Mince the garlic cloves.
- Drain and rinse the kidney and black beans.
2. Brown the Beef:
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté for about 3 minutes, until fragrant and the onion becomes translucent.
- Add 1 pound of ground beef to the pot. Cook for approximately 5-7 minutes, breaking the meat apart with a wooden spoon, until browned.
3. Build the Chili Base:
- Add the chopped red bell pepper to the pot and cook for 2 minutes.
- Stir in 2 tablespoons of tomato paste and cook for another 2 minutes to deepen the flavor.
- Pour in the can of diced tomatoes, kidney beans, black beans, and 2 cups of beef broth.
4. Season the Chili:
- Add the spices: 2 tablespoons of chili powder, 1 teaspoon of smoked paprika, 1 teaspoon of cumin, and 1/4 teaspoon of cayenne pepper.
- Season with salt and pepper to taste.
- Stir all ingredients together until well combined.
5. Simmer the Chili:
- Bring the chili to a gentle boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 30 minutes, stirring occasionally to prevent sticking.
6. Finish and Serve:
- After 30 minutes, taste the chili and adjust the seasonings if necessary.
- Serve hot, garnished with fresh cilantro, parsley, a dollop of sour cream, Greek yogurt, shredded cheese, and sliced jalapeños.
- Accompany with tortilla chips for dipping.
