Blueberry Breakfast Muffins
Ingredients
- 1/2 cup salted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Prepare a 12-cup muffin tin by lining it with paper muffin liners or lightly greasing each cup with melted butter or cooking spray.
2. Cream the Butter and Sugar:
In a large mixing bowl, combine 1/2 cup of softened salted butter and 1 cup of granulated sugar. Using an electric mixer on medium speed, beat the mixture until it's light and creamy, approximately 3 minutes.
3. Incorporate Eggs and Vanilla:
Add 2 large eggs to the butter and sugar mixture, one at a time, ensuring each is fully incorporated before adding the next. Stir in 1 teaspoon of vanilla extract.
4. Prepare the Dry Ingredients:
In a separate bowl, mix 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of baking soda. Whisk together until combined.

Gradually add the dry mixture to the creamed mixture, alternating with 1 cup of buttermilk. Begin and end with the flour mixture, mixing until just combined. Be careful not to overmix.
6. Fold in Blueberries:
Gently fold 1 1/2 cups of fresh blueberries into the batter, distributing them evenly. Be mindful to prevent the berries from breaking and turning the batter blue.
7. Spoon Batter into Muffin Tin:
