Guinness Chocolate Cake with Cream Cheese Frosting

Ingredients

For the Cake:
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup Guinness beer

For the Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract

Instructions

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. Mix Dry Ingredients:
In a medium bowl, sift together 1 cup all-purpose flour, 1 cup cocoa powder, and 1 teaspoon baking soda. Set aside.

3. Cream Butter and Sugar:
In a large mixing bowl, beat 1/2 cup softened butter and 1 1/4 cups sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes.

4. Add Eggs and Flavorings:
Add 2 eggs one at a time, beating well after each addition. Mix in 1/2 cup sour cream and 1 teaspoon vanilla extract until well combined.

5. Incorporate Dry Ingredients and Guinness:
Gradually add the dry ingredient mixture to the wet ingredients, alternating with 1 cup Guinness beer, starting and ending with the dry mixture. Mix until just combined.

6. Bake:
Pour the batter into the prepared cake pan. Smooth the top with a spatula. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool the Cake:
Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

8. Prepare Cream Cheese Frosting:
In a medium bowl, beat 8 ounces softened cream cheese and 1/2 cup softened butter together until smooth. Gradually add 2 1/2 cups powdered sugar. Beat in 1/4 cup heavy cream and 1 teaspoon vanilla extract until smooth and creamy.

9. Frost the Cake:
Once the cake has completely cooled, spread the cream cheese frosting evenly over the top. Decorate with chocolate shavings or additional cocoa powder if desired.
