Oven-Baked Cinnamon Apple and Sweet Potato Pear Crisp
Ingredients
- 2 medium sweet potatoes, peeled and thinly sliced
- 2 large apples, cored and thinly sliced
- 2 ripe pears, cored and sliced
- 1/2 cup pear juice
- 1 teaspoon ground cinnamon
- 2 cups fresh spinach
- 1 tablespoon olive oil or melted butter
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
Instructions
1. Preheat the Oven:
- Set your oven to 375°F (190°C) and allow it to preheat.
2. Prepare the Sweet Potatoes:
- In a large mixing bowl, combine the sweet potato slices with olive oil, 1 tablespoon of brown sugar, half the cinnamon, and salt. Toss well to ensure even coating.
3. Layer the Sweet Potatoes:
- Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 minutes.
4. Prepare the Fruit Mixture:
- While the sweet potatoes are baking, in a separate bowl, mix the apple and pear slices with the remaining cinnamon, brown sugar, and the pear juice.
5. Combine and Bake:
- After the sweet potatoes have baked for 15 minutes, remove them from the oven. Layer the apple and pear mixture over the sweet potatoes. Pour any remaining juice over the top.
6. Bake Again:
- Return the baking sheet to the oven and bake for another 20 minutes until the fruits are tender and lightly caramelized.
7. Add Spinach:
- For the last 5 minutes of baking, add the spinach leaves, spreading them evenly over the top. Return to the oven until the spinach is wilted and bright green.
8. Serve:
- Remove from the oven and let cool slightly. Serve warm, and enjoy as a delightful snack.
