Crock Pot BBQ Pineapple Chicken with Veggie Rice Pilaf
Ingredients
- Main Components:
- 1 pound chicken breasts, boneless and skinless
- 1 cup barbecue sauce
- 1 cup pineapple chunks, with juice
- 1 pound tri-tip beef, cubed
- 1 pound pork brisket, cubed
- Vegetables and Accompaniments:
- 1 cup carrots, peeled and chopped
- 2 cups potatoes, peeled and diced
- 1 cup broccoli florets
- 1 cup cabbage, chopped
- 1 cup mixed vegetables
- Rice Pilaf:
- 1 cup long-grain rice
- 2 cups chicken broth
- Seasonings and Additions:
- 3 cloves garlic, minced
- 1 tablespoon mixed herbs (e.g., thyme, rosemary, oregano)
- 1 tablespoon citrus zest
- Salt and pepper to taste
- Cheesy Tapas:
- 1 cup Swiss cheese, shredded
- 1/2 cup queso sauce
- 2 hoagie rolls, sliced
- 2 tablespoons butter
- Toppings:
- 1/2 cup Cheez-Its, crushed
- 1/2 cup pretzels, crushed
- 1/2 cup peanuts, crushed
Instructions
1. Prepare the Ingredients:
- Slice the chicken breasts and cube the tri-tip and brisket.
- Chop all vegetables including carrots, potatoes, broccoli, and cabbage.
2. Crock Pot Setup:
- Place the chicken, tri-tip, brisket, carrots, potatoes, broccoli, and cabbage at the bottom of the crock pot.
- Add the chopped garlic and herbs over the meat and vegetables.
- Pour the barbecue sauce and pineapple chunks with juice over the top.
- Add citrus zest and season with salt and pepper.
- Cover and cook on low for PT6H (6 hours) or until meat is tender.
3. Prepare the Rice Pilaf:
- 30 minutes before serving, in a medium saucepan, combine rice and chicken broth.
- Bring to a boil, reduce heat to low, cover, and simmer for PT20M (20 minutes) or until rice is fluffy and cooked through.
4. Cheesy Tapas:
- Just before serving, spread butter on hoagie rolls. Toast on a skillet over medium heat until golden.
- Top with Swiss cheese and queso sauce. Allow to melt. Toast for PT5M (5 minutes).
5. Assemble and Serve:
- Lay the rice pilaf on a serving platter.
- Scoop the crock-pot BBQ chicken mixture over the rice.
- Garnish with crushed Cheez-Its, pretzels, and peanuts on top for added texture.
- Cut the cheesy hoagie rolls into bite-sized tapas.
