Stove-Top Bratwurst and Kale with Caraway Potatoes
Ingredients
- 2 tablespoons olive oil
- 1 lb smoked bratwurst, sliced
- 4 medium Yukon Gold potatoes, cut into 1-inch cubes
- 4 cups kale leaves, chopped and stems removed
- 1 1/2 cups chicken broth
- 1 teaspoon caraway seeds
- 2 tablespoons apple cider vinegar
- 1 tablespoon grainy mustard
- 1 tablespoon brown sugar
- Salt, to taste
- Black pepper, freshly ground, to taste
Instructions
1. Heat the Oil:
In a large skillet, warm 2 tablespoons of olive oil over medium heat.
2. Cook the Bratwurst:
Add the sliced smoked bratwurst to the skillet and cook, stirring occasionally, until browned on all sides, about 8 minutes. Remove the bratwurst from the skillet and set aside.
3. Sauté the Potatoes:
In the same skillet, add the Yukon Gold potatoes and caraway seeds. Season with a pinch of salt and black pepper. Cook, stirring occasionally, until the potatoes are golden brown and beginning to soften, about 10 minutes.
4. Deglaze and Simmer:
Pour in 1 1/2 cups of chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, cover, and cook for 10 minutes until the potatoes are tender.
5. Add Kale:
Stir in the chopped kale, cover, and cook until the kale is wilted, about 3–5 minutes.
6. Combine and Flavor:
Return the bratwurst to the skillet. Add 2 tablespoons of apple cider vinegar, 1 tablespoon of grainy mustard, and 1 tablespoon of brown sugar. Stir to combine and allow the mixture to simmer uncovered for an additional 5 minutes to meld the flavors.
7. Adjust Seasoning:
Taste and adjust the seasoning with more salt and black pepper as desired before serving.
