Decadent Pumpkin Chocolate Chip Scones
Ingredients
- 2 cups all-purpose flour
- 1/2 cup pumpkin purée
- 1/4 cup cold butter, cubed
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 cup brown sugar
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
2. Prepare Dry Ingredients:
In a large mixing bowl, whisk together the all-purpose flour, pumpkin pie spice, salt, baking powder, and brown sugar.
3. Incorporate the Butter:
Add the cold butter cubes into the flour mixture. Using your hands or a pastry cutter, gently rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
4. Mix Wet Ingredients:
In a separate bowl, combine the pumpkin purée, heavy cream, and vanilla extract. Stir until smooth.
5. Combine Wet and Dry Ingredients:
Make a well in the center of the dry ingredients and pour the pumpkin mixture in. Gently fold the ingredients together just until incorporated. Be careful not to overmix.
6. Add Chocolate Chips:
Fold in the mini chocolate chips, making sure they are evenly distributed throughout the dough.
7. Form the Scones:
Turn the dough out onto a lightly floured surface. Shape the dough into a circle about 1 inch thick. Use a sharp knife to cut the circle into 8 equal wedges.
8. Bake:
Place the wedges onto the prepared baking sheet, leaving space between each one. Bake in the preheated oven for 15 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
9. Cool and Serve:
Allow the scones to cool on a wire rack for a few minutes before serving them warm. Enjoy these scones ideally within a day for maximum freshness.
