Korean Bulgogi Sauteed Rice Bowl
Ingredients
- 2 tablespoons avocado oil
- 1 tablespoon toasted sesame oil
- 1 medium zucchini, sliced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 large carrot, julienned
- 2 cups baby spinach, lightly packed
- 1 cup mung bean sprouts
- 1 cup shiitake mushrooms, sliced
- 4 cups cooked rice
- 1 pound Korean bulgogi (marinated beef)
- 1/2 pound Korean ground beef
- 1 cup kimchi, sliced
- 4 fried eggs
- 2 tablespoons gochujang
- 2 tablespoons toasted sesame seeds
Instructions
1. Prepare the Vegetables:
- Slice the zucchini, julienne the carrot, and slice the shiitake mushrooms.
2. Cook the Bulgogi:
- In a large skillet, heat 1 tablespoon of avocado oil over medium-high heat. Add the bulgogi and cook for about 5 minutes, or until fully cooked and caramelized. Transfer to a plate and keep warm.
3. Cook the Ground Beef:
- In the same skillet, add the ground beef and cook until browned. Drain excess fat, then return the bulgogi to the pan.
4. Saute the Vegetables:
- Heat the remaining avocado oil in the skillet. Add the zucchini and carrot, seasoning with salt and pepper. Saute for 3-4 minutes until they are tender.
- Add the shiitake mushrooms and cook for an additional 2 minutes until they soften.
- Stir in the spinach and mung bean sprouts, cooking until the spinach just wilts. Remove from heat.
5. Assemble the Rice Bowl:
- Divide the cooked rice among four bowls.
- Top each bowl with the bulgogi-beef mixture and sauteed vegetables.
6. Prepare the Sauce:
- Combine the gochujang with the toasted sesame oil in a small bowl and mix until smooth.
7. Finish the Dish:
- Drizzle the gochujang sauce over each bowl.
- Add a fried egg on top of each rice bowl.
- Garnish with sliced kimchi and sprinkle with toasted sesame seeds.
