Savory Shrimp and Snap Pea Stir Fry



Ingredients



- 1 pound shrimp, peeled and deveined
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 cups snap peas, trimmed
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 2 tablespoons high-heat cooking oil (such as vegetable or canola oil)
- 1 tablespoon butter
- 1/2 teaspoon fine sea salt
- 3 cups cooked rice or noodles
- 1 tablespoon mirin
- 1 teaspoon Chinese five spice
- 1 tablespoon sambal oelek or gochujang

Instructions



1. Prepare the Ingredients:
- Thaw and pat dry the shrimp if previously frozen.
- Slice the onion thinly, mince the garlic, and trim the snap peas.

2. Make the Sauce:
- In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, toasted sesame oil, mirin, and Chinese five spice until the sugar is dissolved.

3. Stir Fry the Shrimp:
- Heat 1 tablespoon of high-heat cooking oil in a large skillet or wok over medium-high heat.
- Add the shrimp and stir-fry for about 1–2 minutes until they begin to turn pink.
- Remove the shrimp from the skillet and set aside.

4. Cook the Vegetables:
- In the same skillet, add the remaining high-heat cooking oil.
- Stir-fry the sliced onion for 2–3 minutes until it becomes translucent.
- Add the minced garlic and snap peas, continuing to stir-fry for an additional 3 minutes until the snap peas are crisp-tender.

5. Bring it All Together:
- Return the shrimp to the skillet with the vegetables.
- Pour the prepared sauce over the shrimp and vegetables, stirring to combine.
- Add the butter, fine sea salt, and sambal oelek or gochujang, tossing everything until the shrimp are fully cooked and coated with the sauce, about 2 more minutes.

6. Serve:
- Serve the stir-fry over a bed of hot cooked rice or noodles.
