Crock Pot Chicken Tacos with Fresh Avocado and Salsa
Ingredients
- 1 1/2 lbs chicken breasts
- 2 cups tomato salsa
- 1 lime, juiced
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 8 small flour tortillas
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- 1 cup sour cream
- 2 avocados, sliced
- 1 cup guacamole
- Hot sauce to taste
- Additional salsa for serving
Instructions
1. Prepare the Chicken:
Place the chicken breasts in the crock pot. Sprinkle with salt and freshly ground black pepper to taste.
2. Add Salsa and Lime:
Pour 2 cups of tomato salsa over the chicken. Squeeze the juice of 1 lime into the crock pot. Stir gently to mix.
3. Cook in the Crock Pot:
Cover the crock pot with the lid and set it to low heat. Cook for approximately 8 hours (PT8H), or until the chicken is tender and can be easily shredded with a fork.
4. Shred the Chicken:
Once cooked, remove the chicken from the crock pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the crock pot and mix it with the salsa sauce.
5. Prepare Tortillas:
Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable.
6. Assemble Tacos:
Lay a warm tortilla flat and place a generous portion of shredded chicken in the center. Top with shredded lettuce, diced tomatoes, a dollop of sour cream, slices of avocado, and a scoop of guacamole.
7. Add Heat and Serve:
Drizzle hot sauce to taste over each taco. Serve with additional salsa on the side for those who prefer extra flavor.
