Savory Herb-Roasted Chicken with Lemon and Garlic
Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, halved
- 6 cloves garlic, peeled
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 tablespoons unsalted butter, melted
Instructions
1. Preheat the Oven:
- Set your oven to 425°F (218°C) and allow it to preheat while you prepare the chicken.
2. Prepare the Chicken:
- Pat the chicken dry with paper towels. This helps to ensure a crispy skin.
- Rub the inside and outside of the chicken with olive oil, salt, and black pepper.
3. Season and Stuff:
- Place the halved lemon, garlic cloves, rosemary, and thyme inside the chicken cavity.
- Optional: Tie the legs together with kitchen twine so the lemon and herbs stay tucked inside.
4. Roast the Chicken:
- Place the chicken breast-side up on a rack in a roasting pan.
- Brush the melted butter over the chicken for an added rich flavor.
- Roast in the oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
5. Rest and Serve:
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. This ensures the juices redistribute.
- Carve the chicken and garnish with additional lemon slices and rosemary if desired. Serve hot.
