Decadent Morning Scramble with Chives and Cheese



Ingredients



- 6 large eggs
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter
- 2 tablespoons fresh chives, finely chopped
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked meat (bacon or sausage), crumbled
- 1 cup mixed vegetables (bell peppers, mushrooms, and onions), finely diced

Instructions



1. Prepare Ingredients: Start by preparing your vegetables. Finely dice 1 cup of mixed vegetables including bell peppers, mushrooms, and onions. Chop the cooked meat into small crumbles. Set aside.

2. Whisk Eggs: In a medium-sized bowl, crack the 6 eggs. Add 1/2 teaspoon of salt and whisk until the eggs are well combined and slightly frothy.

3. Heat Butter: Place a large non-stick skillet over medium heat. Add 2 tablespoons of unsalted butter to the skillet and let it melt, swirling the pan to coat the bottom evenly.

4. Sauté Vegetables: Once the butter is fully melted and begins to bubble, add the diced mixed vegetables to the skillet. Sauté for about 5 minutes, until the vegetables soften and develop a slight golden color.

5. Cook Meat: Add the crumbled cooked meat to the vegetables in the skillet. Stir occasionally, allowing the meat to heat through for an additional 2 minutes.

6. Add Eggs: Pour the whisked eggs into the skillet, stirring gently with a spatula. Allow the eggs to cook for about 1 minute, then gently fold the eggs from the edges towards the center of the skillet.

7. Incorporate Cheese and Chives: Once the eggs are partially set, sprinkle 1 cup of shredded cheese and 2 tablespoons of chopped chives over the eggs. Continue to cook and gently fold the mixture for about 2-3 minutes until the eggs are fully set but still moist, and the cheese has melted.

8. Serve: Once cooked through, immediately remove the scramble from heat and transfer to a serving platter. Garnish with additional chives if desired and serve hot.
