- 1 tablespoon duck fat
- 1 tablespoon coconut oil

- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme leaves
- 1 teaspoon salt
- 2 tablespoons canola oil
- 2 tablespoons avocado oil
- 1/2 cup shredded Cheddar cheese
- 1/4 cup grated Parmesan cheese

Instructions



1. Preheat the Oven:
Preheat your oven to 400°F (204°C) to ensure a hot and even cooking environment.

2. Prepare the Fat Mixture:
In a small saucepan over low heat, melt together the butter, bacon fat, duck fat, coconut oil, and margarine. Stir until fully combined and remove from heat.

In a large mixing bowl, toss the drained canned potatoes with the melted fat mixture, ensuring all pieces are evenly coated. Add the chopped rosemary, thyme, and salt, stirring until herbs and seasoning are distributed evenly.

4. Arrange on Baking Sheet:
Line a baking sheet with parchment paper. Spread the seasoned potatoes in a single layer, ensuring they do not overlap to promote even crisping.

5. Drizzle with Oils:
Lightly drizzle the canola and avocado oils over the potatoes for extra crispiness and flavor.

6. Bake:
